Cut the zucchinis in half and cook for 5 minutes with a little water
Remove the pulp and reserve
Fry the onion in oil, then combine it with the zucchini pulp, crushed crackers, and mix well
Remove from heat
When the mixture is cool, add the eggs, nutmeg, sea salt, and mix again
Stuff the zucchinis and fry them in boiling oil, with the stuffed side up, without turning
Place on a platter and sprinkle with Parmesan cheese
