2 large potatoes, about 1 kg each
3 ears of corn, husked and silked
100 grams fresh cilantro
Salt to taste
Cut the chicken and corn into bite-sized pieces and cook them in a large pot with 3 liters of water
Add whole leaves of cilantro, removing only the thicker stems, and season with salt to taste
Cook for 50 minutes or until the chicken and corn are tender
Remove the cooked chicken and corn from the pot, then add the potatoes to cook in the same broth until they're fully broken down and the liquid has thickened into a creamy consistency
Remove any bones from the chicken and cut it into regular pieces, then return it to the pot
Heat a little water and turn off the heat
Cut each ear of corn into 4-5 pieces
Garnish with the corn and serve with cooked rice, avocado, fresh cream, and capers as accompaniments
