8 fresh artichokes

Rinse the artichokes and remove the chokes
Then, cut off the stems and place them in a bowl with lime juice. Reserve
Heat a medium skillet over medium heat, add olive oil, minced garlic, and the artichoke stems
Cook, stirring occasionally, until golden brown
Reduce heat, add chopped green olives, capers, and season to taste
Add 1 cup of hot water, cover with a lid, and simmer for 10 minutes
Finally, add chopped parsley
Serve as desired, accompanied by hollandaise, mayonnaise, or another sauce of your choice.
