500 g of shrimp, finely chopped
1 cup of melted cheddar cheese, finely chopped
1/3 cup of green pepper, finely chopped
1/4 cup of onion, finely chopped

1/2 cup of mayonnaise
2 tablespoons of lemon juice

5 cooked artichokes, drained
500 g of shrimp, finely chopped

Combine the chopped shrimp, cheese, green pepper, onion, and salt
Mix the lemon juice with the mayonnaise and add it to the previous mixture
Check the seasoning and adjust as necessary with additional salt and black pepper
Remove the central leaves from the artichokes and the fibrous part, forming a cavity
Stuff the artichokes with the shrimp mixture and arrange them in a baking dish
Pour about 1 cm of hot water, cover, and bake at moderate temperature (170°) for 35 minutes
Let it sit for 5-10 minutes before serving.
