Let the herring fillets soak in cold water for 12 hours and cut them into thin strips
Peel the onions and cut them into fine rings
Fry the onion in butter until it's soft
Peel the potatoes and cut them into strips
Make layers of potato, herring, and onion in a refractory dish greased with butter
Sprinkle the layers lightly with pepper
The final layer should be potato
Sprinkle with breadcrumbs and cover with some pieces of butter or margarine
Bake in a moderate oven for 20 minutes
Pour the cream over the top, letting it flow to the bottom of the dish
Put back in the oven again, reducing the heat, and bake for an additional 20 to 25 minutes
Serve in 4 to 6 portions.
