1 1/4 cups of rice

1 teaspoon of salt
1/2 teaspoon of curry powder
1 red bell pepper diced
1 onion diced
2 zucchinis cut into slices
1 cup of fresh corn kernels
2 cups of fresh mushroom sliced
1 cup of chicken broth (optional, dissolve half a tablet in the same amount of boiling water)
2/3 cup of orange juice

1 In a large microwave-safe bowl, combine the rice, olive oil, salt, and curry powder
Microwave on high for one minute
Add the bell pepper, onion, zucchini, corn, and mushrooms
Add the chicken broth and orange juice
2 Cover and microwave on high for 15 minutes, stirring halfway or until the rice is tender
Let it rest inside the oven for an additional five minutes
Serve immediately.
