Beat 3 egg whites until snowy, then slowly add 3 tablespoons of sugar, beating continuously. Add 1/2 teaspoon of vanilla and mix well. Place the spoonfuls on top of your preferred cream. Put the container with the cream in a baking dish filled with cold water. Bake in a very hot oven (300°F) just enough to golden the tips of the soufflés. Serve warm, every 6 servings.
