2 cups of cooked and diced broccoli
11/2 cup of rice
1 cup of chopped onion
4 tablespoons of olive oil
Salt to taste

In a large saucepan, cook the onion in 2 tablespoons of olive oil for 5 minutes
Fry the rinsed and drained rice until lightly toasted
Add boiling water and season with salt
Cook over low heat for 20 minutes or until the rice is tender
Place the broccoli on top of the rice and drizzle with remaining olive oil
Cover again and let it rest for 5 minutes
Mix well, place in a plastic container, wait for it to cool down, then cover
Remove from refrigerator and freeze for later use
To serve, remove from freezer with 6 hours' notice, let it thaw in the refrigerator
Steam in the microwave on high for 3 minutes
If preferred, use the conventional oven at 350°F (175°C) for 15-20 minutes.
