Season the beef with salt and garlic
In a hot skillet, heat 3 tablespoons of oil and 2 tablespoons of butter
Add the beef and cook until browned and cooked through, stirring occasionally. Reserve
In another skillet, fry the onion over low heat until caramelized
Mix the rice with the cooked beef and onion
Quickly mix in some of the peas with the beef and rice mixture
Form a 24cm diameter ring mold and place the remaining peas inside, then top with the beef and rice mixture
Press the mold firmly
When serving, heat the mold in the oven and then unmold
Serves 8
