1 medium onion diced

1 cup grated carrot
2 cups of rice
1 cup roasted cashew nuts
2 tablets of chicken broth dissolved in 5 cups of hot water

In a pan, over medium heat, sauté the diced onion in olive oil, stirring occasionally until it's soft
Add the grated carrot and rice, stir-frying always for two minutes
Join the roasted cashew nuts and chicken broth dissolved and let it boil
Lower the heat, cover and cook for 30 minutes or until the rice is well cooked
Transfer to a serving dish and serve.
