2 cups of cooked white or brown rice
1/2 cup of shredded cheddar cheese
2 eggs, beaten
2 tablespoons of chopped fresh parsley
salt and pepper to taste
1 handful of raw spinach leaves, chopped
4 tablespoons of germinated wheat germ
1 tablespoon of melted butter or margarine
2 cups of cooked white or brown rice

Combine cooked rice with cheese
In another bowl, whisk together eggs, parsley, salt, and pepper
Add to the rice mixture
Add chopped raw spinach
Pour into a 25 cm diameter greased baking dish
Sprinkle with germinated wheat germ mixed with melted butter or margarine
Bake in a moderate oven (180°C) for 35 minutes
Serves 4-6 people
Serve with a tomato and white bean salad.
