Melt the butter or margarine and sauté the onions slowly without letting them brown
Add the rice, coconut milk, and water
The liquid should exceed the rice by about 2 cm
If necessary, add more water
Season to taste with salt and cook slowly in a covered pan until the liquid has been absorbed and the rice is well cooked
Stir occasionally while cooking
It takes about 25 minutes
This is not a loose rice dish
Serve with poached fish
