1/4 cup of mayonnaise

2 bell peppers, green
2 medium eggplants cut into thin slices
2 large onions, sliced thickly
2 red peppers, medium
2 yellow peppers, medium
1 well-chopped garlic clove

Cut each bell pepper in four pieces
Cut each piece in half lengthwise
Grill the slices with the skin side down. Reserve
Squeeze out some garlic and mix it into the mayonnaise
Spread it on the peppers on the grilled side
Preheat the oven to medium temperature
Slice the peppers and grill them along with the eggplant and onions. Reserve
Cut the mozzarella cheese and fill the bell peppers with it, along with the roasted vegetables
Bake in the oven for 10 minutes and serve warm.
