1 medium onion, finely chopped
2 tablespoons of olive oil
1 1/2 cups of uncooked white rice
1 cup of toasted cashews
5 cm of fresh ginger, sliced
3 1/2 cups of water
2 tablespoons of sweet paprika
2 teaspoons of dried thyme
2 bell peppers, seeds removed and finely chopped
For garnish
2 oranges, peeled and segmented
1 sprig of fresh thyme

Fry the onion and olive oil in a pan until the onion is softened
Add the rice and cashews to the pan and cook for 2-3 minutes
Add the remaining ingredients to the pan and bring to a boil
Reduce heat to medium-low, cover, and simmer for about 20 minutes or until the rice is cooked
While still warm, distribute the orange segments
If desired, garnish with a sprig of fresh thyme and serve immediately.
