In a large skillet, melt the butter and olive oil
Sauté the onion until golden brown
Add the rice and sauté for a bit longer
Add salt, raisins, almonds, and mushroom
Cover with water and let it cook until the liquid starts to evaporate
Pour in the champagne
When the rice is cooked and dry, turn off the heat and let it rest for 15 minutes
Before serving, sprinkle with toasted almond shells
