1 pound of clean dust (1 kg), cut into pieces

Fry the garlic and tomato in a large saucepan with olive oil for 15 minutes, stirring occasionally
Add the thyme, cayenne pepper, rice, wine, and dust
Stir well
Cover, reduce heat, and cook until the wine evaporates
Add water and continue cooking for another 15 minutes or until the rice and dust are tender
Serve immediately
