Heat the olive oil in a large skillet over medium heat
Add the rice and beef broth
Cook for 20 minutes or until the rice is tender
Remove from heat and set aside
In another skillet, cook the bacon until crispy
Add the remaining ingredients, excluding the eggs, and stir-fry for a few minutes, stirring constantly
Check the seasoning
Mix this stir-fry with the reserved rice, place in a serving dish, and garnish with the eggs
Serve immediately.
