2 tablespoons olive oil
1 chopped onion
Salt to taste
3 cups cooked rice
1 1/2 cup sliced mushrooms
2 cups small diced ham
1 cup black currant raisins
1 cup water
2 cups dry champagne
1 1/2 cups ground nuts
1 tablespoon chopped parsley (optional)

In a saucepan, heat the olive oil and slightly brown the onion
Then, season with salt and add the rice
Stir for 1 minute and add the mushrooms
Simmer, stirring constantly, for another minute
Add the ham and raisins and stir for a bit more
Pour in the water and champagne
Wait for it to boil
Let it cook partially covered until it's almost done, then add some more water if needed
Once it's very close to being cooked, add the nuts, mix everything together, and let it simmer until it's dry
It's ready!
When serving, you can sprinkle a little parsley on top if you like.
