1 medium onion, chopped

4 eggs
Salt and black pepper to taste

Chop the onion and slice the potatoes into wedges
Melt the butter or margarine
Add the chopped onion and let it cook until slightly browned
Add the sliced potatoes and let them cook for about 2 minutes
Beat the eggs with a fork
Add salt, black pepper, and oregano
Mix well
Pour over the potatoes and onion
Let it cook until the bottom is golden brown
Let the hash browns slide onto a plate and flip them again
Serve in four portions.
