Rinse the bacon and change the water once
If using homemade bacon, leave it to marinate for five hours
If store-bought, let it sit overnight
Chop the bacon into medium-sized pieces and sauté it in a pan with olive oil until golden brown
If the bacon is fatty, use less fat
Mince the garlic and chop the onion together
When the bacon is well browned, add the chopped onion and garlic and cook for another minute
Add the rice to the pan and let it cook for a bit
Pour boiling water over the rice to about two fingers above the rice level
Taste and adjust the salt as needed
Cook on low heat until the rice is tender
Serve hot.
