About 4 hours before serving, cook the rice
Then, combine it with spinach, eggs, and Parmesan cheese
Preheat the oven to moderate temperature (170°F)
Cut the beef into a large filet
Arrange the cooked ham on top, slightly overlapping the slices
Spread the rice mixture over the beef, roll up the meat, and tie
Place in a baking dish without covering
Arrange the bacon strips on top, side by side
Bake for 2 1/2 hours, basting several times with the pan liquid
If needed, cover with aluminum foil
You can prepare a sauce with the pan liquid if desired
Serve at 8 people.
