Step 1: Heat the olive oil in a pan, sauté the onion and cook for 1 minute
Then add the carrot and zucchini and cook until they're tender
Let it cool down
In a blender, mix the eggs and cream cheese until smooth
Step 2: Mix the cooked rice with the vegetable mixture
Season with salt, pepper, and cilantro
Step 3: Place the mixture in a baking dish greased with butter, top with the beaten egg mixture, sprinkle Parmesan cheese, and bake in the oven for 40 minutes or until golden brown.
