2 cups of uncooked rice
1/2 cup of butter
1 onion, finely chopped
2 cloves of garlic, minced
4 cups of water
1/2 cup of lemon zest
Salt and pepper to taste

Dissolve the butter in a large saucepan over medium heat
Add the chopped onion and minced garlic
Cook until the onion is translucent
Reduce the heat to low and continue cooking for about 5 minutes, or until the mixture starts to brown
Add the washed and drained rice to the saucepan
Stir well with a wooden spoon until the rice is evenly coated and starting to stick to the bottom of the pan
Add the boiling water and season with salt to taste
Stir well
Mix everything together and cover the saucepan
Cook over medium heat for about 20 minutes, or until the liquid has been absorbed and the rice is tender
If necessary, add more boiling water and continue cooking
Remove the saucepan from the heat
Add the lemon zest and stir gently with a fork to combine
Cover the saucepan again and let it sit for 5 minutes before serving
Garnish with salt and pepper to taste.
