1/3 cup of olive oil

1.5 kg of pork rump (lower loin), cut into pieces
2 cups of rice

2 tomatoes, peeled and diced

In a pressure cooker with olive oil, combine the garlic, onion, vinegar, thyme, and pork
Let it sit for 15 minutes, then seal and cook for another 35 minutes, starting from when the liquid begins to boil
Remove from heat, allow all pressure to release
Open the lid, add the rice, water, and tomato
Season with salt and black pepper
Serve hot.
