Place the oxtail in a large refrigerator-safe container, cover with water and cook in the microwave on high for 16 minutes or until tender
Drain and cut into pieces
Cover and reserve
In another large refrigerator-safe container, combine the onion, garlic, and olive oil
Cook in the microwave on high for 3 minutes
Add the crushed tomatoes and blend well with a spoon
Add the thyme, salt, and if desired, the red pepper
Mix and cook again in the microwave on high for an additional 5 minutes
Combine the oxtail, mix well, and serve
