3 cups (ch) of water

1/3 cup (ch) of butter
2 cups (ch) of rice
12 cups (ch) of milk
1 1/2 cup (ch) of sugar
6 egg yolks, slightly beaten

In a pot, combine the water, lemon peel, and butter
Bring to a boil, then add the rice
Mix well and cook until it starts to dry
Add the milk, 3 cups at a time, stirring only when necessary (including the last 3 cups of milk, mix in the sugar)
Cook for 50 minutes or until the rice is tender and slightly stuck to the bottom of the pot
When cooked, add some warm sweet rice to the egg yolks, mix well, and return to the pot
Stir well without scraping the bottom
Simmer for two minutes
Remove from heat and serve in dishes
Dust with cinnamon
