1 1/3 cup of rice
1 tablespoon of spinach puree (available at supermarkets)
3 tablespoons of boiling water

2 cinnamon sticks
1 cup of raisins

Place the rice in a bowl and cover it with 2 1/2 cups of water, letting it rest for 30 minutes
Dissolve the spinach in boiling water and reserve
Drain the rice and reserve the cooking liquid
Heat the oil and add the cloves and cinnamon sticks
Mix for one minute and add the rice
Fry for three minutes and add the raisins, reserved cooking liquid, and spinach puree
Season with salt and simmer at high heat
Reduce the heat
and cook until the rice is tender
Stir occasionally during cooking and add more hot water if necessary
Garnish with parsley and serve immediately.
