1 1/2 tablespoons of olive oil

1 cup of chopped green onion
1 cup of chopped parsley
1 1/2 cups of rice
3 3/4 cups of chicken broth

In a medium saucepan, heat the olive oil and butter
Add the chopped green onion and parsley
Fry over medium heat for 1 minute, stirring constantly
Add the rice and stir until grains are well coated with fat, which takes about 3 minutes
Add the chicken broth
Allow it to come to a boil, then reduce the heat, cover well, and simmer slowly until all liquid has been absorbed and the rice is tender (about 20 minutes)
Just before serving, stir with a fork
