Make various cuts on the surface of the meat
Embed strips of bacon and small pieces of anchovy in these cuts
Rub salt, black pepper, and orange zest onto the meat
Soak the olive oil and sauté the onion together with the meat, until it's browned on all sides
Add wine, tomato extract, and some water
Place it in a hot oven (200°F) preheated to asse for about 2 hours, basting occasionally with the remaining water
Add more water if needed
Remove the meat from the sauce
Reduce the sauce and mix it with flour and yogurt
Simmer on the stovetop for some minutes, stirring constantly
Check seasoning
Serve the meat with the sauce on top, 4 servings.
