For the sauce
1 tablespoon olive oil
2 minced garlic cloves
1 medium onion (100g), finely chopped
4 medium tomatoes (480g), seeds removed, diced
1 tablespoon chopped fresh cilantro
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup water (120ml)
For the fish
4 tuna fillets (750g)
1/2 teaspoon salt
1/2 teaspoon black pepper

Heat a grill or skillet over low heat
Make the sauce: in a medium pan, heat the olive oil over medium heat
Add the garlic and onion and cook until they start to brown
Add the tomato, cilantro, salt, and black pepper and let simmer
Add the water, reduce the heat, cover the pan and let cook until the tomato is tender (about 15 minutes)
Prepare the fish: while that's cooking, in a medium bowl, season the fillets with salt and black pepper
Brush the grill or skillet hot with olive oil and grill the fillets, two at a time, until they can be easily flaked with a fork (about 4 minutes per side)
Serve the sauce over the tuna and serve immediately
