Mix sugar with 3 cups of water
Bring to a boil and let cook until, when lifting the spoon with the syrup, it forms a thread that holds when lifted
Remove from heat and let cool well. Reserve
Strain the egg yolks through a fine-mesh sieve and combine with coconut milk
Mix well
Next, add the cold syrup and mix well
Then, bring to a boil while stirring constantly until the mixture thickens completely
Serve chilled in small cups or individual portions
If desired, sprinkle with cinnamon before serving
