Leave the cod to soak for 24 hours, changing the water three times
Before preparing it, boil the cod and gently pry open the pieces without breaking them apart
Prepare a sofrito with olive oil, annatto, garlic, onions, tomatoes, and parsley
Add the cod when it starts to simmer, along with sliced bananas and coconut milk
Let it come to a boil again., Serve hot with white rice.
