Boil the potatoes with their skins on
Soak the codfish in cold water overnight, then flake it into shreds, removing any bones and skin
In a pan, heat the olive oil over medium heat
Add the onions, garlic, and rosemary, and cook until the onion is lightly browned
Add the codfish and potatoes to the pan, stirring gently to combine
Let it simmer for a few minutes
Remove from heat
Transfer all ingredients to a large baking dish
Bake in a moderate oven (180°C) for about 15 minutes
Serve garnished with slices of cooked eggs, olive berries, and chopped parsley
Serves 4-6 people.
