Leave the cod to soak for a day or two
Soak and shred
Remove the rind from the bread loaf and grind the pulp
Combine the finely chopped onion, half of the tomato, sauce, olives, raisins, Parmesan cheese, nuts, oregano, and salt, if needed
Mix well and add breadcrumbs
Moisten very well with olive oil
Place a layer of the mixture above, a layer of cod, and a layer of tomato slices, moistening again with olive oil
Repeat the operation until all ingredients are used up
The last layer should be of tomato
Douse with a little more olive oil and bake in a hot oven until slightly golden.
