Wash the cod under cold running water thoroughly
Rag it with your hands into 6 or 7 pieces
Hold each piece under the faucet and scrub with your fingers to help remove the salt
Cover with cold water
Let it rest for 1 hour
Drain and cover with fresh water, letting it rest for another 1 hour
Drain again, wring out, and drain once more
Squeeze the cod well to remove as much moisture as possible
Break it up well, removing some bones that may still be present
Mix with tomato, onion, oil, pepper, and salt to taste
Let it rest for about 10 minutes before serving
Serve in 2 portions.
