Season the fish with salt and pepper and refrigerate it covered with plastic wrap for the next day
Melt the butter and add the white wine
Remove from heat and mix in the chopped herbs
Transfer the fish to a baking dish and brush with seasoned butter
Top with sliced mango and drizzle with orange juice
Bake in a medium oven preheated for 15 minutes covered with aluminum foil
Remove the foil and let it lightly brown
Serve immediately.
