4 large potatoes

Wash the potatoes thoroughly with their skins
Use a fork to make holes in the surface of each one
Brush the potatoes with oil and place them directly on the oven rack, at the highest position
Roast them in a medium-temperature oven for approximately 45 minutes or until, inserting a knife, the potato is soft
Remove from the oven and cut along the length to about halfway through the potato
Place your chosen filling in the opening and serve immediately.
