1/2 cup of butter or margarine at room temperature
1 cup of confectioners' sugar tightly packed in a cup
1 cup of all-purpose flour
1 teaspoon of active dry yeast
1 cup of instant oats
1/2 cup of your preferred gelato

1/2 cup of your preferred gelato
Preheat the oven to moderate heat (350°F)
Grease a small baking dish
Beat the butter or margarine with the confectioners' sugar
In a separate bowl, mix together the flour and yeast, add the oats
Add to the mixture and mix until you get a crumbly texture
Remove 1 cup of the mixture and reserve
Press the remaining mass into the prepared mold
Spread the gelato on top
Sprinkle with reserved crumbs
Gently compress with your hands
Bake for 30-40 minutes or until golden brown
Cut into bars while still warm and let cool.
