1/2 teaspoon of salt
a pinch of black pepper

7 medium-sized potatoes (around 800 g), peeled and cut into 0.5 cm thick slices

In a small saucepan, combine the vinegar, garlic, lime rind, salt, and black pepper
Bring to a boil over high heat
Reduce the heat and simmer for 2 minutes
Remove from the heat, add 1/3 cup of olive oil and parsley
Mix well and reserve
In a large frying pan, heat the remaining olive oil over high heat
Add the potato, reduce the heat, and cook, stirring occasionally, until it's tender and lightly browned (around 12 minutes)
Transfer to a serving dish and serve with the sauce
