4 cooked and mashed sweet potatoes

In a bowl, combine mashed sweet potatoes, butter or margarine, egg yolks, green onion, salt, and black pepper
Mix well
In a separate bowl, beat the egg whites until stiff peaks form
Mold 6 hills on a baking sheet with the sweet potato mixture
Fold the mayonnaise and lemon juice into the beaten egg whites, stirring delicately
Place a spoonful of the egg white mixture on top of each sweet potato hill
Bake in a moderate oven (170°C) for 10 to 12 minutes or until the meringue is golden brown
Serve garnished with stuffed olives and strips of pepper
Divide into 15 portions.
