Roasted Sweet Potatoes

    Cook 1 kg of sweet potatoes with their skins. Peel and slice them into wedges. Grease a baking dish and layer it with a bed of sweet potatoes, followed by a layer of shredded cheese (Muenster or Cheddar) and a layer of butter, then place in the hot oven for 20 minutes. As a variant, instead of using cheese, employ tomato sauce and use oil instead of butter.

    A variant for this recipe: Slice the sweet potatoes thinly, into rounds. Grease the baking dish with plenty of butter and create multiple layers: one of sweet potatoes, one of butter, and another of grated cheese (Parmesan or Muenster). Leave it in the oven until nicely toasted. You can use margarine instead of butter. It's a great accompaniment to any meat.
