1.75 pounds of parnips

Wash and scrub the parnips well
Cut them into quarters lengthwise
Fry the parnips quickly in sesame oil and season with salt
Cover the pan and cook for about 25 minutes, adding some water as needed to prevent drying out
Flip the parnips occasionally
Remove the seeds from the tomatoes, cut them into thin strips
Cut the green scallions into fine rings
Toast the sesame seeds in a dry skillet until slightly browned
Add the butter and let it foam
Drain the parnips, add the sesame seeds with butter and mix well
Beat the eggs lightly with soy sauce and pour over the parnips
Cook over low heat until firm
Sprinkle with tomato, scallion, and sesame seeds
Serve immediately
