Boil the potatoes with their skins in boiling water for about 15 to 20 minutes, or until they're tender
Check by poking a fork into one
Let them cool slightly and remove the skins
Set aside
Heat a large skillet over low heat with the sugar
Stir occasionally until it dissolves and caramelizes
Add the butter and stir with a wooden spoon until the sugar has dissolved
Add half of the potatoes and cook, stirring constantly, until they're coated in the caramel
Prepare another batch of caramel for the remaining potatoes
Serve warm, if desired
