Heat a pan over medium heat with butter and water
When the mixture comes to a boil, add the flour all at once, stirring constantly with a wooden spoon
Cook without stopping to stir until the dough forms a ball that releases from the bottom of the pan
Turn off the heat and let it rest for 3 minutes
Add the eggs one at a time, stirring vigorously
Add the mashed potatoes and season with salt and pepper
In a skillet, heat about 3 cm of oil
Fry the dough in batches until golden brown
Drain on paper towels and serve still warm
Serves 6-8 people
Note: Dauphine Potatoes are a side dish accompaniment
They can also be served as an appetizer, if you add 1/4 cup of grated Parmesan cheese to the dough, or in each serving, a piece of anchovy or defumated linguiça.
