1 kg of sweet potato

6 red bell peppers, seeded and chopped into cubes

2/3 cup of Madeira wine or Porto

In a large pot with plenty of water, add the sweet potatoes and bring to a boil until they're tender
Drain them, let them cool, remove the skin, and cut into cubes
In a large skillet, melt the butter, add the bell peppers, and cook over low heat, stirring constantly, for 3 minutes or until they're tender
Increase the heat, add the lemon juice, confectioner's sugar, cinnamon, and wine, and let it simmer
Lower the heat and cook for another 3 minutes
Add the sweet potatoes and mix gently for 2 minutes, being careful not to break them
Serve warm
