Wash the sweet potato well and cook it with the skin on until it's soft
Remove the skin and cut the sweet potato into large chunks
In a bowl, mix together the all-purpose flour and cornmeal, and season with salt and pepper
Pass the still-warm sweet potato through the mixture
Then, pass it through the egg and cake flour, coating it evenly
Heat the oil well and fry it on both sides until golden brown
Drain off any excess oil and serve.
