7 cups of finely chopped sweet potato
2 and 1/2 cups of water
2 cups of grated ginger
2 whole cinnamon sticks
6 units of allspice
1 tablespoon of lime zest
3 cups of diced papaya

Cook the sweet potato until it's tender
Mash and reserve
Make a thick syrup with water, ginger, cinnamon, allspice, and lime zest
Add the sweet potato to the syrup
Cook until it thickens
At this point, blend the papaya in a blender and add it to the almost-ready dessert
Cook until it detaches from the bottom of the pan
Let it cool and serve.
