1 kg of sweet potato
Salt to taste
3 cloves of garlic, minced
1 onion, chopped
2 tomatoes, peeled and seeded, diced
1/2 cup (chalice) of olive oil
2 soup spoons of thyme, minced

Preheat the oven to 200°C
Peel and cut the sweet potatoes in half
Boil them in salted water until they're tender but not mushy
In a baking dish, place the sweet potatoes and spread on top the garlic, onion, and tomato
Drizzle with olive oil and sprinkle thyme
Gently mix everything together and bake for approximately 25 minutes or until the sweet potatoes are nicely golden brown
Serve immediately.
