1 kg of potatoes

4 egg yolks

Peel the potatoes
Wash and boil them in salted water
Drain and press the warm potatoes through a ricer
Add the butter and 3 of the egg yolks
Mix well and season to taste with salt and nutmeg
Place the puree in a bag and shape into small mounds on a greased baking sheet
Combine the milk with the remaining egg yolk
Carefully brush the mounds with this mixture
Bake in a moderate oven for 10 or 15 minutes, until golden brown
