Peel the sweet potatoes, cut them into four parts, and cook in a covered pan for 15-20 minutes or until they are tender but not falling apart
Drain the sweet potatoes and shake the pan over low heat to remove excess moisture
Mash the sweet potatoes using a ricer
Mix the mashed sweet potatoes with a wooden spoon until smooth
Add butter, salt, and pepper to taste
Beat the eggs with yolks and mix with the sweet potatoes
Beat until the mixture is light and fluffy
Scoop the mixture into a lightly greased baking dish and bake in a moderate oven preheated to golden brown
